Mushrooms are a perfect substitution!
Serve up these Shiitake "Pulled Pork" Sliders, and you might wonder why you'd ever need to make pulled pork again.
Ingredients
- 1 tablespoon avocado oil
- ½ cup diced onion
- 4 ounces slice shiitake mushrooms
- 1 clove garlic, minced
- 2 tablespoons apple cider vinegar
- 1 teaspoon smoked paprika
- 1/4-1/2 cup BBQ sauce
- salt and pepper, to taste
Slaw
- 1 cup shredded green cabbage
- 1 cup shredded purple cabbage
- ½ cup grated carrot
- 1 tablespoon olive oil
- Juice of 1 lime
- salt and pepper, to taste
Preparation
- Heat a non-stick skillet over medium high heat. Add oil, onions and mushrooms.
- Sauté for 6-8 minutes until mushrooms and onion begin to soften.
- Add garlic, apple cider vinegar, smoked paprika and BBQ sauce.
- Reduce heat to medium and cover with a lid.
- Cook for 8-10 minutes or until mushrooms are completely tender. Season with salt and pepper. Set aside.
- Mix together slaw ingredients in a small bowl and toast slider buns in oven at 400 F until lightly crisp.
- Top each toasted slider with 2 tablespoons mushroom mixture and ¼ cup slaw.
